Loganair launches Singh on a Wing social series with Scottish chef Tony Singh MBE

03 Feb 2026 Loganair, the UK’s leading regional airline, has showcased Islay’s unique culture and cuisine in the first episode of a new YouTube series starring celebrated Scottish chef Tony Singh MBE.

Episode one of Singh on a Wing features the Loganair brand ambassador travelling to the Scottish island of Islay in the Inner Hebrides, where he meets local ecologist and seaweed forager Fiona MacGillivray. Fiona takes Tony out along the shoreline for a hands-on seaweed foraging session, introducing him to a variety of native seaweeds, including nori – best known for wrapping sushi - and their culinary uses.

 

The journey continues at the Port Ellen Maltings, where Tony is given an exclusive behind-the-scenes tour to explore the heart of Islay’s whisky production. From there, he heads to Lagavulin Distillery for an immersive experience led by assistant experience and events manager, Karen Robertson.

 

Crossing the bay, Tony smokes freshly hand-dived scallops on the shore before returning to the distillery to bring everything together. The episode culminates in the creation of a signature dish: scallop escabeche with seaweed and Lagavulin butter on sourdough toast.

Born and raised in Leith, Edinburgh, Tony is a third-generation Scottish Sikh whose career spans acclaimed restaurants, television appearances and entrepreneurial ventures.

  

Renowned for his fusion of Scottish and Asian flavours, he is widely recognised for his work promoting Scottish culture and supporting local communities – values that closely align with Loganair’s focus on regional connectivity and community engagement.

Filming Singh on a Wing has been an incredible experience. There’s nothing like seeing our beautiful coastline from the air. 
What’s really excited me about this series is discovering how vital those connections are between Scotland’s island communities. Learning how people are brought together through travel, shared culture and incredible food has been genuinely inspiring, and it’s a wonderful way to celebrate everything Scotland has to offer.

 

In the second episode, set to be released next month, Tony travels to Stornoway in Lewis, where he visits a local crofter and prepares a mutton dish alongside a traditional stovies recipe, highlighting the importance of local food systems and heritage on the islands. A third episode will feature the island of Tiree. 

 

The series forms part of Loganair’s wider partnership with Tony Singh MBE, through which he supports the airline across campaigns, events and collaborations, helping to promote its Scottish roots, regional connections and role in supporting local communities. 

 

Loganair continues to grow its network across the UK, recently adding Jersey routes following the collapse of Blue Islands. Last month it launched its 10th regional base in Southampton and was named the most punctual airline of 2025 by the UK Civil Aviation Authority, underlining the airline’s reputation for reliability across its regional network.
