Make Tony's Lobster Masala with Fresh Tiree Lobster

Crafted by Tony Singh, MBE

Batch size: 6 people

Ingredients (6 portions)
  • 3 Whole Lobster - approx. 500-600g each portioned
  • Lobster Stock - 500ml
  • Basmati Rice - 400-500g (uncooked)

Masala Base

  • Chopped Tomatoes - 1 tin 
  • Unsalted Butter - 300g 
  • Garlic Cloves, finely chopped - 50g
  • Fresh Chillies, finely chopped - 10 
  • Ginger, finely chopped - 150g 
  • Rapeseed Oil - 150ml
  • Ajwain Seeds - 1 tsp
  • Turmeric - 1½ tsp
  • Garam Masala - 3 tsp
  • Salt to taste
Method

1. Heat oil in a heavy pan. Add Ajwain Seeds and cook until aromatic and lightly browned.

2. Add Garlic, cook until just turning golden. Add Ginger and Chillies and cook 1 minute.

3. Add Turmeric, Garam Masala and Salt. Stir and cook 1 minute to activate spices.

4. Add Chopped Tomatoes.

5.Cook on medium heat until the oil splits out of the masala.

6. Add Lobster and Lobster Stock, Simmer gently until  cooked

7. Stir in Unsalted Butter to enrich and gloss the sauce. Taste and adjust seasoning.

8. Serve immediately with warm Basmati Rice.
